Gimme Shelter I think its a very cool because most of it is footage of the Stones rehearsing the title song.

Shockspeeder If you are a film buff this is a classic. I mean most if not all filmmakers know of this Goddard film. Its pure gold but a strain to watch after awhile (not the Stone's parts). Its remastered and in widescreen and yes, plenty of 1968 Stones in the studio footage! Look for it used but I had no problem dropping $20 for it.
