I finally found a couple of apps to download YouTube videos per an email I received last night:

Unfortunately it's windows only.
Here's a tip: It names everything that it downloads the same so be sure to rename the file before you download the next.
If you want to put it on a video iPod here's another little app that works great.

I think this will also convert to other formats too.
