fireontheplatter i ate pig skin when i lived in arkansas,it goes well with busch beer. when cooked crisp it is called 'crackle' i do believe. and trust me if it is called that....don't mess with it....otherwise you'll regret it.

the boys i hung with tere really know how to cook let me tell you what.....moose never tasted so good
